Eating the fruits of their labor- Broccoli Greens Salad

I have friends who garden successfully (lucky for me) and who also like to share their harvest (lucky for me). This year everyone seems to have an abundance of broccoli greens, onions, and tomatoes.



Broccoli Greens (Warm) Salad

1 tablespoon olive oil
1 tablespoon minced garlic
1 small onion, finely chopped
10-15 leaves of broccoli greens (you can remove the center of the leaves- stalks- if you want a less bitter salad) roughly chopped

10 Cherry Tomatoes, halved
1/8 - 1/4 cup crumbled feta cheese
Sea Salt to taste

Heat olive oil to medium high; add garlic and onions and saute until brown/tender. Add broccoli greens (leaves) and cover 90 seconds (until leaves are not quite wilted). Transfer to bowl; add halved tomatoes, feta cheese, and sea salt. Stir and serve warm.

We ate it with salsa lamb burgers and steamed broccoli.
